The sirloin flap, also known as the Bavette, is a steak that comes from the bottom of the sirloin. We consider it to be very similar to the flank steak or skirt steak. It is a lean, flavorful cut of meat with many possibilities. Marinate, grill or pan sear and slice against the grain for salads, fajitas or stir frys!
